Alfredo

1 or 2 garlic cloves minced
½ cup butter
3/4 cup heavy cream (I add a little more)
½ cup Parmesan cheese
Saute garlic in butter than add cream and cheese. Cook in low for 10 minutes. Serve over cooked Fettuccine. I top with tomatoes and bacon.

Chicken Alfredo

1-2 Chicken breasts
Favorite pasta
Frozen Peas
1 Jar Ragu Classic Alfredo Sauce
Salt
Pepper
Parmesan Cheese

Season chicken with salt and pepper and brown in a small skillet. Cook pasta according to package directions. Steam peas to desired tenderness. Cut chicken into bite sized pieces. Drain pasta. Toss together pasta, chicken, peas and Alfredo sauce. Sprinkle with parmesan cheese.

Easy Tortellini Soup

Cook:
1 lb Italian sausage and drain well. Remove from casing if you can’t find it ground. We like the hot stuff but it might be too much for kids.

Add:
(1) large onion, chopped
(1) garlic clove, finely chopped
(3) 14.5 cans beef broth
(2) 14.5 oz cans diced tomatoes, undrained
(1) 8 oz can tomato sauce
(1) cup dry red wine — substitute cranberry juice, if you must : )
(2) carrots, sliced thin
(1) tbsp sugar
(2) tsp italian seasoning — if you don’t have that, just do mix of oregano, basil and thyme

Simmer above for 30 mins or, actually, as long as you want.

Add:
(2) small zucchini, sliced thin — not necessary if your kids would freak about green stuff in their soup
(1) 9 oz package of cheese-filled tortellini — get the good stuff — it’s worth it

Simmer all for 10 more mins.

Grate about a cup of parmesan cheese (or any cheese) and sprinkle on top. Great with sour dough bread on the side.

Lemon Italian Chicken


4 Chicken breasts, skinless and boneless then cut in half
1 egg
½ tsp garlic powder
Salt and pepper
¾ cup Italian bread crumbs
½ tsp garlic powder
½ cup parmesan cheese
½ cup real butter, melted or Olive Oil***do not use margarine***
¼ tsp garlic powder
1 TBLS parsley
3-4 TBLS lemon juice
½ pound mushrooms, copped

Mix egg, ½ tsp garlic powder, salt and pepper. Dip chicken in egg mixture. Mix bread crumbs, ½ tsp garlic powder and ½ cup parmesan cheese. Dip chicken in crumbs; place in greased 9x13 inch pan. Mix butter, ¼ tsp garlic powder, parsley and lemon juice. Drizzle 1/3 of butter/olive oil mixture over chicken. Bake 30 minutes at 375° or until chicken is cooked through. Mix remaining butter with mushrooms; spoon over chicken. Bake 15 minutes more.
